Chocolate peanut butter poke cake

I love peanut butter and I love chocolate and I love Reese Peanut Butter cups even more!!
When I saw this facebook somewhere I knew I had to make this for my family. They loved it. And it super easy!!


You will need:
One chocolate mix (plus the ingredients to make it)
1 package of vanilla pudding as directed
1/4 cup melted peanut butter
1 tub of cool whip


Directions:
Make cake as directed on box and put in a 9x13 pan and cook. Once its cooked take it out of the oven and let cool. Then take a wooden spoon and poke holes in the cake.
While the cake is cooling make pudding as directed. Then pour melted peanut butter in the vanilla pudding. Then spread over the pudding over the cake cover and place in fridge for about 1 hour to let pudding absorb into the cake. Then take cool whip and spread over top. You can top the cake with peanut butter cups or reeses peices. I didn't have them so I drizzled chocolate and peanut butter over top and use peanut butter chips and chocolate chips.

Brownies

I love a me a good brownie!! So I thought I would give this recipe a try and it was so good I wanted to eat the whole pan.. by myself!! lol





You will need: 
For Brownies
  1. 1 cup butter, melted
  2. 1/2 cup unsweetened cocoa powder
  3. 2 cups all-purpose flour
  4. 2 cups granulated sugar
  5. 4 large eggs
  6. 4 teaspoons vanilla extract

For Icing
  1. 1/4 cup butter, softened
  2. 1/4 cup milk ( I use 2%)
  3. 1/4 cup unsweetened cocoa powder
  4. 3 cups powdered sugar

Directions

  1. Preheat oven to 350° F. Line a 9x13-inch baking dish with foil and spray foil with non-stick spray. Set aside.
  2. In the bowl of an electric stand-mixer, add the melted butter and cocoa powder. Using the paddle attachment, blend until smooth.
  3. Add the flour and sugar. Beat together then add eggs and vanilla. Mix just until combined. Don't over mix. (Batter will be thick)
  4. Pour batter into prepared baking dish and spread out evenly. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Remove brownies from oven and let stand 15 minutes before frosting. You want the brownies still warm when you frost them!
  5. FOR CHOCOLATE FROSTING: Beat together all the frosting ingredients until smooth. Pour and spread over warm brownies. Let cool completely before cutting and serving.

Butterscotch Peanut Butter Squares and Rocky Road Squares


I remember growing up and my mom made these squares all the time. I always liked them with colored marshmallows but sometimes she made them with white.

The other day I was at home with the boys. Brody asked me "hey paige, what are you planning on doing with those marshmallows over there?" I said "well brody, I think I am going to make butterscotch peanut butter squares" Brody said "oh?" with a disappointed look on his face. He said I was hoping that you would make those square that Nan made the other day. I said well I could?  The zach piped up but I love butterscotch peanut butter squares!!
 So last Tuesday why they were at church I made them each a little treat! Butterscotch Peanut Butter Squares for one and Rocky Road Square for the other. They didn't last long!


Butterscotch Peanut Butter Squares

You will need:
1/2 cup butter
1 cup peanut butter
1 bag butterscotch chip
1 bag colorful marshmallows

Directions:
1. Melt butter, peanut butter and butterscotch chips in a pot on medium heat
2. Once melted let cool a little bit then mix in marshmallows.
3. Put in a 9x9 pan and let harden.





Rocky Road Squares


1 bag of semi sweet chocolate chips
1/4 cup butter
1 bag of marshmallows


Directions
1. Melt butter and chocolate chips together in a pot on medium heat
2. Once melted let cool a little bit and mix in marshmallows
3. put in a 9x9 pan and let them harded

option: you can add Rice Krispies, coconut or nuts

My first time making meatloaf

The last week I have had in my mind to make meatloaf. I think I seen it on a TV show and have been thinking about it since. I have never made it before. My hubby has but I haven't. I figured it couldn't be that hard.. right? Overall it wasn't too bad. oh yes thats bacon on top! 
I made this yesterday for lunch and it was really good! It made lots for left overs!!




You will need:
2 pounds of ground beef
2 eggs beaten
1 clove of garlic chopped
1 onion chopped
1 cup Italian bread crumbs
10 slices of bacon
salt and pepper to taste

Sauce:
1 1/2 cup ketchup
1/3 cup brown sugar
1 tsp of mustard


Directions:
Preheat oven at 350 degrees
Put ground beef in a bowl and add eggs, garlic, onion, bread crumbs and salt and pepper. Mix together well with your hands
Form the mixture into a loaf shape on a broiler pan, which will allow the fat to drain. (Line the bottom of the pan with foil to avoid a big mess!)

Lay bacon slices over the top, tucking them underneath the meatloaf. 

Make the sauce: add ketchup, brown sugar, and mustard in a mixing bowl. Stir together. Pour 1/3 of the mixture over the top of the bacon. Spread with a spoon. 

Bake for 45 minutes, then pour another 1/3 of the sauce over the top. Bake for another 15 minutes. Slice and serve with remaining sauce.


Corn Chowder and Biscuits






you will need
4 slices of bacon
1 onion

1/2 cup celery chopped
1 carrot cut up in small pieces
1 can of cream of corn
1 can of evaporated milk 

1 box of chicken stalk (Or veggie stalk)
1 can of cream of chicken


Directions:
first cook bacon and cut up into little pieces. take a large pot and sattee onions and celery and carrot. then add all the ingredients and let simmer over medium heat until carrots are cooked and soup has thickened up.

Hot Broccoli Dip


I always loved going to our neighbor Jennifer's house for parties growing up. She always made this dip! Its weird the other day I was thinking of this amazing dip and started craving it. We were having friends over and I wanted to make something for them. So I thought this would be something different. Everyone seemed to like it.




Ingredients:
1 package of Cream Cheese
1/2 cup mayo
2 cups broccoli chopped into small pieces
1 clove of garlic minced
1/2 onion chopped into small pieces
1/2 cup of mixed peppers chopped up
2 cups of cheese shredded
1/4 cup Parmesan cheese
1/2 cup real bacon bits

Directions:
Preheat oven at 350
Mix cream cheese, mayo, Parmesan cheese, garlic together. Then add broccoli, onion, and green peppers and 1/2 cup of cheese, and bacon bits. Mix that all together. Then place in 9x13 dish. Then take the rest of the cheese and sprinkle on top. bake for 20-30 mins until cheese is bubbly and melted.  Serve with nacho chips or crackers. Enjoy!!
